Chicken <br /> <br />For Marination:- <br />1 cup curd <br />1 tsp. Salt <br />1 tsp. Red Chilli Powder <br />1 tsp. Turmeric Powder <br />1 tsp. Coriander Powder <br />1 tsp. Cumin Powder <br />1 tsp. Garam Masala <br />2½ tbsp. Ginger-garlic paste <br />3 green chillies, sliced <br />1 Cinnamon stick <br />1 Star Anise <br />1 Mace <br />1 Black Cardamom <br />¼ tsp. Green Cardamom, ground <br />8-10 Black Peppercorns <br />4-5 cloves <br />1 tsp. Ghee <br />Coriander Leaves, chopped <br />Mint Leaves <br /> <br />For cooking rice:- <br />Water (3 times the quantity of rice) <br />1 stick Cinnamon <br />1 Mace <br />1 Star Anise <br />2-3 Black Cardamoms <br />5-6 Cloves <br />4-5 Black Peppercorns <br />½ tsp. Green Cardamom <br />1 tbsp. Ghee <br />Salt to taste <br />300 gms. Basmati Rice <br /> <br />For frying onions:- <br />1 kg. Onions, sliced <br />Oil for frying <br /> <br />Layering:- <br />Chicken <br />Ghee <br />Coriander Leaves <br />Mint Leaves <br />Fried Onions <br />Basmati rice <br />Food colouring <br />Saffron milk <br />Green Chillies <br /> <br /> <br />Method:- <br />1. Marinate the chicken in a bowl by adding the marination ingredients to it and keep aside for 60-90 minutes. <br />2. In a saucepan, take water and add cinnamon, mace, star anise, black cardamom, cloves, black peppercorns, green cardamom, ghee, salt and bring to a boil. Once the water starts to boil, add the basmati rice to it. Drain water once cooked. <br />3. Once the chicken is narinated properly, cook it in a wok for 15 minutes. <br />4. In a pot layer the cooked chicken with ghee, coriander leaves, mint leaves, fried onions, basmati rice and again with ghee, food colouring, Saffron milk, mint leaves, fried onions and green chillies. <br />5. Seal the pot with wheat dough and cook on low flame for 5 minutes. <br />6. Take a pan and keep it on low flame and place the pot on the pan and cook for 10 minutes. <br /> <br />Chicken Dum Biryani is ready to serve! HAPPY COOKING!!!
